Watermelon Mojitos

A refreshing watermelon mojito with fresh mint, lime, rum, and a fizzy club soda finish.

Ingredients
  

  • 4 fresh mint leaves for muddling
  • ¾ ounce fresh lime juice freshly squeezed for best flavor
  • ¾ ounce simple syrup store-bought or homemade
  • 2 ounces light rum white rum works best
  • 3 ounces watermelon puree strained see notes for making puree
  • Club soda to taste adds fizzy finish
  • Mint sprigs and small watermelon wedges for garnish optional

Method
 

  1. In the bottom of a Collins or tall glass, muddle the mint leaves, lime juice, and simple syrup together using a muddler or the back of a wooden spoon.
  2. Fill the glass two-thirds full with ice. Add the rum and watermelon puree.
  3. Top the drink with club soda and stir well to combine.
  4. Garnish with a mint sprig or small watermelon wedge, if desired.
