Ingredients
  

  • 1 ½ cups pineapple chunks fresh or canned see notes
  • ¼ cup pineapple juice freshly squeezed or bottled
  • 2 tablespoon coconut cream use solid coconut cream from full-fat coconut milk
  • 3 oz white rum for two servings adjust for more
  • 1 tablespoon organic cane sugar optional adjust based on sweetness of pineapple
  • 3 cups ice crushed or whole depending on preference

Method
 

  1. Add the pineapple chunks, pineapple juice, coconut cream, rum, sugar, and ice into a high-speed blender.
  2. Taste the mixture and adjust the sweetness with additional sugar if desired.
  3. Pour the blended cocktail into glasses and garnish with fresh pineapple wedges.
