Ingredients
  

  • 8 large strawberries fresh, hulled and chopped for syrup
  • 1 cup granulated sugar used to sweeten the fruit syrup
  • ½ cup water for dissolving the sugar into syrup
  • ½ cup water room temperature for whisking the matcha
  • 1 teaspoon ceremonial grade matcha powder high-quality for smooth flavor
  • ½ cup whole milk or preferred plant-based milk for creaminess
  • 2 tablespoons strawberry syrup prepared from the cooked fruit mixture
  • Ice cubes enough to fill the serving glass

Method
 

  1. Place the chopped strawberries in a small saucepan, add the sugar, stir them together, and let the mixture rest for about 10 minutes to draw out the juices.
  2. Pour in the water and gently simmer the mixture over medium-low heat, stirring now and then, until the sugar is fully dissolved, then take it off the heat and allow it to cool.
  3. Strain the liquid into a container, saving the solids for another use, then cover and chill the syrup until you’re ready to use it.
  4. In a small bowl, combine the room-temperature water with the matcha powder and whisk quickly until the mixture looks smooth and foamy.
  5. In a separate bowl, stir together the milk and strawberry syrup until evenly blended.
  6. Fill a glass with ice, pour in the strawberry milk, gently layer the matcha over the top, and serve right away.
