Ingredients
  

  • 1 spray cooking spray For greasing the muffin tin
  • 1 green bell pepper chopped For a burst of color and flavor
  • 1 red bell pepper chopped For added sweetness and crunch
  • 1 bunch green onions chopped For a mild onion flavor
  • 8 large eggs The base of the muffins packed with protein
  • 2 ¾ ounces fully-cooked bacon pieces You can use your favorite brand or cook fresh bacon
  • ¼ cup whole milk For creaminess
  • 1 pinch garlic powder To taste enhances flavor
  • 1 pinch onion powder To taste adds depth
  • Salt to taste Season according to preference
  • Ground black pepper to taste Season according to preference
  • ½ 8 ounce package shredded mild Cheddar cheese Mild cheddar for a smooth creamy texture

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 12-cup muffin tin with cooking spray.
  3. Place bell peppers and green onions into a large bowl.
  4. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper.
  5. Sprinkle Cheddar cheese into the bowl and whisk until fully combined.
  6. Pour the egg mixture equally into the muffin cups, filling them to about ¾ full.
  7. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes.
  8. Allow muffins to cool slightly before serving.
